In 2009 I had the pleasure to have dinner at Antic Aponiente, Angel Leon Restaurant, and I was positively surprised by this product that the chef known as the “Chef of the Sea” included in his menu.
I did not find the right time during the past years to introduce this product in one of our menus, until I started to be part of Con Gracia Restaurant, time at which I re-experience the explosion of the sea last in my mouth.
